Homemade granola: A healthy & inexpensive lunch

Eating out at the office can get very expensive. What stops us from bringing our own lunches to work  everyday ? It is usually not having enough time and not having enough choice.  So here is an amazing recipe for homemade granola that is easy to prepare, can be made in bulk and stored, and is inexpensive and healthy. Add this to your list of possible things to eat or eat it EVERYDAY like I have been!!On average you could save more than $2000 per year by preparing yourself a healthy lunch and brown bagging it!

It’s often difficult to come up with different ideas for lunch that will keep your taste buds and waist both happy.

I recently went away with my hubby for his birthday to The Essex culinary spa in Vermont where I tasted the most incredible granola. I asked a few questions on what was in it, I brought home a sample with me and luckily after several tries I was able to replicate it! I have seriously been eating this daily for 4 months with a spoonful of goat’s milk yogurt and cut up berries.  I have to say that I still look forward to it. It has become my daily treat! Thankfully it’s super inexpensive and healthy!

Preheat oven to convection bake 350 degrees.

Ingredients:

5 cups of large oats

¾ cup of sunflower seeds

½ cup brown sugar

½ cup cranberries

½ cup sesame seeds

1 cup of sliced almonds

1 cup of crushed cashews

Mix all dry ingredients above and then place on 2 large greased baking sheets.

½ cup of oil

½ cup of maple syrup

Mix the oil and the maple syrup and drizzle equally all over the granola. Stir gently and spread on the pans.

Bake 20-30 minutes. Take out during baking to stir and scrape the pan. Watch to be sure it is not burning but just slightly browned. Turn off oven and let cool inside oven.

Stir and pour into an airtight glass container.

Pack up some yogurt, berries, granola and a spoon. Stir it all together at lunch and enjoy!
